10 green peppers
500gr of pork cut into small cubes
300gr of rice
3 onions grated
2 crab apples peeled and grated
1 skein of parsley
1 skein of peppermint chopped
some leek (only white part) cut into rings
4-5 tomatoes peeled and grated (kept seperately)
half teacup of oil
some sugar, salt & pepper

Pre-heat oven to 180o C.  To make the filling, simmer the oil in a pan and add the onions, the pork cubes , the rice, the 4-5 chopped tomatoes, the leeks, the herbs (parsley and peppermint), the grated crap apples, some sugars, salt, pepper and just a little water.  Cook, stirring frequently so as the rice won’t overcook.  When the filling is ready, remove the pan from the heat and let it cool down.  Then take a green pepper, cut off the top to use a cover, clear the inside from any seeds, stuff it with the filling and put the cover on top.  Put all the stuffed peppers in a griddle, all covered with their caps.  Add the 2-3 grated tomatoes that were kept separately, some olive oil and water.  Bake in the oven for about 30 minutes.  If needed, a little more water should be added.
